Ingredients (for three Napoleon, more or less):
- 1 large eggplant 2 large tomatoes
- and are durito
- 150 grams of mozzarella into slices
- 1 egg
- Flour Salt
- Oil Vinegar of Modena
- Sugar Honey
- Basil (or mint)
Preparation: Cut
eggplant, sliced \u200b\u200bnot too fine, add salt to taste, first in flour batter and then into the beaten egg. Fry.
Cut tomatoes into slices, and so we have sliced, breaded eggplant, tomato and mozzarella (mozzarella slices can be halved if large) and go alternately.
Place leaf on leaf, tomato, eggplant, mozzarella, eggplant, mozzarella, eggplant, mozzarella, tomato and mozzarella (you can change it).
The sauce is prepared by mixing and stirring: a few drops of oil, some drops of balsamic vinegar, a pinch of sugar, a pinch of salt, a pinch of honey, and basil (or mint).
The top trim can be done frying tomato peel (peeling the tomato like an orange and cut the strips into pieces) or placed above, instead, a sprig of mint or basil.
Finally, add a few drops of the sauce over and around decorating the plate. You can make more art than the picture, sure ... ;-).
